Zesty-Lime Buddha Bowl

The zesty-lime Buddha Bowl is a great option for a quick and easy dinner or lunch. It will take you less than 30 minutes to prepare!


Ingredients:


½ mango: cut into small squares.

1 cup of spinach: wash throughly

½ Avocado: cut into small squares.

½ cup of chickpeas: if you buy canned chickpeas rinse them well with purified water to lower the amount of sodium.


Quinoa: to cook, bring 2 cups of water into a boiling point. Add 1 cup of quinoa and let it cook in low heat. It usually takes 15 to 20 minutes. Keep an eye on it so it doesn't burn to the bottom. For this bowl I used 2.5 Tbsp. of quinoa


Sweet potatoes: Peel them and cut them into small squares. On a baking sheet, pour 1 Tbsp. of extra-virgin olive oil so they don't stick. Spread the potatoes in the baking sheet and sprinkle a little bit of garlic salt, pepper and Italian spices. Bake them at 400 Fahrenheit for 15-20 minutes.


Zesty-Lime Dressing:

¼ cup of extra-virgin olive oil

1.5 Tbsp. of orange juice

1.5 Tbsp. of lime juice

1 Tbsp. of honey

1 Tbsp. of Italian herbs

1 tsp. of rice wine vinegar

½ tsp. of garlic salt

¼ tsp. of mustard

Directions: Mix all the ingredients together in a bowl and refrigerate. Whisk before serving.
