Coconut-Cajun Shrimp

You are going to love this tasty recipe since it is super easy to cook and of course it tastes amazing! Besides…it is super healthy for you!

Ingredients:

1½ lbs large shrimp, peeled and de-veined

¼ teaspoon black pepper

¼ teaspoon cayenne pepper

¼ teaspoon garlic salt

¾ teaspoon dried oregano

¾ teaspoon dried thyme

1 teaspoon paprika

1 tablespoon of coconut oil

1½ cup of basmati rice

⅓ cup of shredded coconut

Directions

1. Combine the black pepper, cayenne pepper, garlic salt, dried oregano, dried thyme and paprika in a large zip-top plastic bag; seal bag and shake to blend the ingredients.

2. Add the shrimp and shake to coat.

3. Heat the coconut oil in a large non-stick skillet over medium-high heat. Saute 4 to 5 minutes or until they are bright pink on the outside and no longer transparent in the center.

4. Steam the basmati rice and once is done add the ⅓ cup of shredded coconut and blend in with the rice.

5. Add the shrimp on top of the rice and serve it next to your favourite salad! You can also add some cantaloupe slices and some green peppers too....
